Don't Tell Charles began as a small specialty coffee & dessert shop in 2013 and evolved into a modern cake studio & workshop in 2016.
Over the years, thousands of cakes were baked for weddings, birthdays and celebrations. Like many bakers, we started by trying every recipe and technique we could find.
But running a real cake business quickly revealed a truth most tutorials don’t talk about:

Meet Thao
Thao Armstrong is the cake designer and teacher behind Don’t Tell Charles.
Over the past decade, she has become known for challenging traditional cake making methods and introducing simpler, more efficient systems that have helped more than 11,000 cake makers build confidence in the kitchen.
Her teaching focuses on helping cake makers understand why recipes and techniques work, so they can adapt, troubleshoot, and create with confidence.
