No. DTC cakes are not sponge cakes. They have a similar texture and structure to a butter cake or pound cake however, because we use cream for the fat component, the process is super simple.

In Australia, thickened cream that has 35% milk fat and contains a thickening additive such as gelatine, vegetable gum or other modifying agents.
For this recipe, the thickening agent isn’t important. The important factor is the 35% milk fat content. In other countries, thickened cream is also called heavy cream or whipping cream. -
